Okra with lamb and rice with mixed nuts

Serves: 4
Ingredients
For the main dish:
- 2 bags of frozen okra (500g each)
- 1 kg of diced lamb
- Ghee
- Coriander seeds
- Tomato paste
- Lemon juice
- Garlic
- Onion
- Oil
- Salt & paper
For the rice:
- 3 cups of rice
- Thin noodles
- Mixed nuts
- Sultanas
Method
For the main dish:
- Stir the frozen okra in little oil until warm
- Melt the ghee in a saucepan and sauté the onion until soft, then add the garlic and season to taste with salt, pepper and coriander seeds
- Fry for a couple of minutes then add the lamb and toss until sealed and lightly browned.
- Add the tomato puree and paste. If more liquid is needed, add the stock or water. Cover and simmer for 30–35 minutes.
- Add the okra and cook for another 5–10 minutes. Add the lemon juice and remove from the heat.
For the rice:
- Heat some oil in a saucepan, add the thin noodles and cook until light brown.
- Add the rice and cover with water.
- In a frying pan heat the nuts and sultanas in 1 tbsp of oil until they change colour (don't burn it).
- Serve as per the photo.
